- 2 medium tomatoes, chopped
- 1 cup chopped green pepper
- ½ cup chopped red onion
- 4 green onions, sliced
- 1 garlic clove, minced
- 1 cup Italian salad dressing
- ¼ cup sour cream
- ¼ cup minced fresh parsley
- Tortilla chips, for serving
Instructions
- Rinse and drain the black-eyed peas thoroughly.
- Chop the tomatoes, green pepper, red onion, green onions, and garlic.
- Combine the peas and chopped vegetables in a large bowl.
- In a separate bowl, mix the Italian dressing, sour cream, and parsley until smooth.
- Add the dressing to the pea mixture and toss gently to coat.
- Cover and refrigerate for at least 4 hours before serving.
