Description

Creamy Black-Eyed Pea Salsa made with tender beans, fresh vegetables, and Italian dressing. Served chilled as an easy appetizer or dip.


Ingredients

  • 2 cans (15½ ounces each) black-eyed peas, rinsed and drained
  • 2 medium tomatoes, chopped
  • 1 cup chopped green pepper
  • ½ cup chopped red onion
  • 4 green onions, sliced
  • 1 garlic clove, minced
  • 1 cup Italian salad dressing
  • ¼ cup sour cream
  • ¼ cup minced fresh parsley
  • Tortilla chips, for serving

Instructions

  1. Rinse and drain the black-eyed peas thoroughly.
  2. Chop the tomatoes, green pepper, red onion, green onions, and garlic.
  3. Combine the peas and chopped vegetables in a large bowl.
  4. In a separate bowl, mix the Italian dressing, sour cream, and parsley until smooth.
  5. Add the dressing to the pea mixture and toss gently to coat.
  6. Cover and refrigerate for at least 4 hours before serving.
