Ingredients
- 1 ½ cups dark chocolate chips
- 2 tbsp unsalted butter (or coconut oil for dairy-free)
- ⅔ cup granulated sugar (or substitute with erythritol)
- ⅓ cup unsweetened cocoa powder
- 2 large eggs (or flax eggs for vegan)
- 1 tsp vanilla extract
- ½ tsp almond extract (optional)
- ½ cup dried cherries (or fresh, drained cherries)
- ½ cup chopped walnuts or pecans (optional)
Instructions
- Preheat the oven: Set your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Melt chocolate and butter: In a microwave-safe bowl, melt the dark chocolate chips and butter in 20-second intervals, stirring each time, until smooth. Let it cool slightly.
- Mix dry ingredients: In a separate bowl, combine the sugar and cocoa powder. Stir until evenly blended.
- Combine wet and dry mixtures: Gradually fold the cocoa mixture into the melted chocolate. Add eggs (or flax eggs), vanilla extract, and almond extract, and stir until a thick batter forms.
- Add mix-ins: Gently fold in the dried cherries and nuts, ensuring they’re evenly distributed.
- Shape and bake: Scoop tablespoon-sized portions onto the baking sheet, spacing them out. Bake for 10-12 minutes, until edges are firm but centers remain soft. Cool on the sheet for 5 minutes before transferring to a wire rack.
