Description

Savory, peppery, and absolutely delicious! This Black Pepper Chicken is packed with bold flavors, tender chicken, and a rich, spicy sauce. A perfect quick and easy meal for any day!


Ingredients

  • 500g (1 lb) chicken breast or thighs, cut into bite-sized pieces
  • 1 tbsp freshly ground black pepper
  • 1 onion, sliced
  • 1 bell pepper, sliced (any color)
  • 1 celery stalk, sliced
  • 3 cloves garlic, minced
  • 1 tsp ginger, minced
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp cornstarch (optional, for thickening)
  • 2 tbsp vegetable oil
  • 1/2 tsp salt (adjust to taste)

Instructions

1️⃣ Marinate the Chicken: In a bowl, mix the chicken with 1 tbsp soy sauce and half of the black pepper. Let it marinate for 10-15 minutes.
2️⃣ Prepare the Veggies: Slice the onion, bell pepper, and celery. Mince the garlic and ginger.
3️⃣ Cook the Chicken: Heat 1 tbsp oil in a wok or pan over high heat. Add the chicken and stir-fry until golden and fully cooked (5-7 minutes). Remove and set aside.
4️⃣ Sauté the Aromatics: In the same pan, add another tbsp of oil. Sauté the garlic, ginger, and onion for 1-2 minutes.
5️⃣ Add the Vegetables: Toss in the bell pepper and celery. Stir-fry for another 2 minutes until slightly tender but still crisp.
6️⃣ Combine Everything: Return the chicken to the pan. Add the remaining soy sauce, oyster sauce, and black pepper. Stir well to coat everything. If using cornstarch, mix with a little water and add to the pan for a thicker sauce.
7️⃣ Final Touch: Stir-fry for another 1-2 minutes. Serve hot with steamed rice or noodles!

Notes

1️⃣ Use Freshly Ground Black Pepper – Pre-ground pepper loses its potency over time. For the best bold, spicy flavor, grind your black pepper fresh before cooking!

2️⃣ High Heat is Key – Stir-frying requires a hot pan! Make sure your wok or skillet is properly heated before adding the chicken to get that perfect sear and prevent sogginess.

3️⃣ Don’t Overcrowd the Pan – Cook the chicken in batches if needed. Overcrowding releases too much moisture, making it harder to achieve a flavorful, crispy texture.
