Ingredients

  • ¼ cup granulated sugar
  • 2 ¼ tsp instant yeast
  • ½ tsp salt
  • ½ cup warm milk
  • ¼ cup unsalted butter, melted
  • 2 large eggs
  • 1 cup chocolate (milk, dark, or white), melted for filling
  • ½ cup chocolate chips or drizzle for topping
  • Optional toppings: crushed nuts, powdered sugar, or sprinkles

Instructions

  • Prepare the Dough:
    In a large bowl, combine flour, sugar, yeast, and salt. Mix in warm milk, melted butter, and eggs to form a soft dough. Knead for 8–10 minutes until smooth. Cover and let it rise for 1 hour or until doubled in size.
  • Shape the Doughnuts:
    Roll out the dough on a lightly floured surface to ½-inch thickness. Cut into circles using a doughnut cutter or two round cutters of different sizes. Place doughnuts on a tray lined with parchment and let rise for 30 minutes.
  • Cook the Doughnuts:
    Heat oil in a deep pan to 350°F (175°C). Fry doughnuts in batches for 1–2 minutes per side until golden. Drain on paper towels. For a lighter version, bake at 375°F (190°C) for 10–12 minutes.
  • Fill with Chocolate:
    Let doughnuts cool slightly. Use a piping bag fitted with a narrow tip to inject melted chocolate into the centers.
  • Top and Decorate:
    Drizzle melted chocolate over the doughnuts and sprinkle with your desired toppings—chocolate chips, nuts, or powdered sugar.

  • Perfect Dough Consistency: Ensure the dough is soft but not sticky. Over-kneading can make the doughnuts dense, while under-kneading may prevent them from rising properly.
  • Chocolate Quality Matters: Use high-quality chocolate for the filling and topping to achieve a smooth, rich texture. Adding a splash of cream to the melted chocolate enhances its creaminess.
  • Monitor Frying Temperature: Keep the oil temperature steady at 350°F (175°C). Too hot, and the doughnuts will burn on the outside while remaining undercooked inside; too cool, and they’ll absorb excess oil.
