Description

Blueberry Banana Bread is a soft, moist homemade loaf made with ripe bananas, creamy yogurt, and juicy blueberries. This easy fruit loaf works beautifully with fresh or frozen blueberries and makes a delicious breakfast, snack, or dessert.


Ingredients

  • 2 1/2 cups all-purpose flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon table salt
  • 4 tablespoons unsalted butter, melted and cooled
  • 3/4 cup granulated sugar
  • 3/4 cup plain yogurt or sour cream
  • 2 large eggs, beaten
  • 3 very ripe bananas, mashed well
  • 2 teaspoons vanilla extract
  • 1 cup blueberries, fresh or frozen and unthawed

Instructions

  1. Preheat the oven to 350°F and spray a 9 x 5-inch loaf pan with cooking spray.
  2. In a medium bowl, whisk together the flour, baking soda, and salt.
  3. In a large bowl, whisk together the melted butter and sugar until smooth.
  4. Whisk in the yogurt or sour cream, beaten eggs, mashed bananas, and vanilla extract until fully combined.
  5. Gently fold the dry ingredients into the wet ingredients until just combined. Do not overmix.
  6. Fold in the blueberries gently. The batter will be thick.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 65 to 70 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  9. Let the bread cool in the pan for 10 minutes.
  10. Remove the loaf from the pan and transfer it to a wire rack to cool for about 1 hour before slicing.

Notes

  1. Use very ripe bananas with brown spots for the best sweetness and flavor.
  2. If using frozen blueberries, add them straight from the freezer without thawing.
  3. Measure flour carefully to avoid a dry loaf.
  4. Do not overmix the batter after adding the flour.
  5. Store leftovers in an airtight container and eat within 2 to 3 days because of the blueberries.
