Description

Craving something warm? Blueberry biscuits are fluffy, buttery, and filled with juicy berries. Easy to make and ready fast.


Ingredients

Scale

2 cups all-purpose flour

1 tablespoon granulated sugar

1 tablespoon baking powder

1 teaspoon salt

6 tablespoons cold unsalted butter, cubed

3/4 cup cold buttermilk

1 cup fresh blueberries (or ¾ cup dried blueberries)

2 tablespoons melted butter for brushing

Optional Glaze:

1 cup powdered sugar

23 tablespoons milk or heavy cream

1 teaspoon vanilla extract or lemon juice

Pinch of salt


Instructions

1. Whisk flour, sugar, baking powder, and salt.

2. Cut in cold butter until crumbly.

3. Pour in buttermilk and mix gently.

4. Fold in blueberries carefully.

5. Pat dough into a thick rectangle.

6. Fold several times for layers.

7. Cut into 8 biscuits.

8. Brush tops with melted butter.

9. Bake at 425°F for 18–20 minutes.

10. Mix glaze ingredients and drizzle if desired.

Notes

Chill dough for 10 minutes for extra height.

Coat blueberries in flour if they are very juicy.

Use frozen berries straight from the freezer.
