- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 2 tablespoons sugar
- 2 cups fresh blueberries
- 2 tablespoons sugar
- 1 tablespoon cornstarch
- 1 tablespoon lemon juice
- 24 ounces cream cheese, softened
- 1 cup sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup sour cream
- 3/4 cup all-purpose flour
- 1/2 cup brown sugar
- 1/2 teaspoon cinnamon
- 1/4 cup unsalted butter, cold and cubed
Instructions
- Preheat oven to 325°F and prepare a 9-inch springform pan.
- Mix crust ingredients and press into pan. Chill.
- Combine blueberries with sugar, cornstarch, and lemon juice.
- Beat cream cheese and sugar until smooth. Add eggs one at a time. Mix in vanilla and sour cream.
- Pour batter over crust. Add blueberry mixture on top.
- Prepare crumble and sprinkle over cheesecake.
- Bake 55-65 minutes until slightly set. Cool gradually and refrigerate at least 4 hours before serving.
Notes
- Use room temperature cream cheese.
- Cool gradually to prevent cracks.
- Refrigerate overnight for best flavor.
