- 1½ cups fresh or frozen blueberries
- Optional: ¼ teaspoon almond extract
Instructions
- Preheat the oven to 375°F (190°C) and line two baking sheets with parchment paper.
- Whisk together the flour, baking powder, and salt in a medium bowl.
- In a separate bowl, cream the softened butter and sugar until light and fluffy.
- Beat in the egg, vanilla extract, and lemon zest until smooth.
- Add the dry ingredients to the wet mixture and mix just until no dry flour remains.
- Gently fold in the blueberries, taking care not to crush them.
- Scoop the dough onto the prepared baking sheets, spacing the portions a few inches apart.
- Bake for about 12 minutes, or until the edges are lightly golden and the centers look just set.
- Allow the cookies to cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
Notes
- Pat fresh blueberries dry before folding them into the dough to prevent excess spreading.
- Chill the dough for 20–30 minutes if you prefer thicker, bakery-style cookies.
- Use frozen blueberries straight from the freezer to reduce color bleeding in the dough.
