For the pudding:

  • 1 cup all-purpose flour
  • 1 cup sugar
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 tbsp butter (melted)
  • 1 tbsp white vinegar
  • 1 egg
  • 1 tsp vanilla extract
  • ½ cup milk
  • ½ cup apricot jam
  • 1 cup fresh blueberries

For the sauce:

  • ½ cup heavy cream
  • ½ cup sugar
  • ¼ cup butter
  • ½ cup hot water
  • ½ tsp vanilla extract

Instructions

  • Preheat the oven to 350°F (175°C). Grease a baking dish.
  • Mix dry ingredients: In a bowl, whisk together flour, sugar, baking powder, and salt.
  • Prepare wet ingredients: In another bowl, whisk egg, melted butter, vinegar, vanilla, milk, and apricot jam.
  • Combine: Gradually mix wet ingredients into dry ingredients until smooth. Fold in blueberries gently.
  • Bake: Pour batter into the prepared dish and bake for 30-40 minutes until golden brown and a toothpick inserted in the center comes out clean.
  • Make the sauce: While the pudding bakes, heat cream, sugar, butter, hot water, and vanilla in a saucepan over medium heat until smooth.
  • Soak: Once baked, poke small holes in the pudding and pour the warm sauce over it. Let it absorb.
  • Serve: Enjoy warm with custard, vanilla ice cream, or extra fresh blueberries!
