Instructions
- In a small saucepan, combine blueberries, honey, and lemon juice over medium heat and simmer for 5 minutes until blueberries soften.
- If using cornstarch, dissolve it in water and stir into the blueberry mixture to thicken, then cool completely.
- Mix Greek yogurt and vanilla extract until smooth and adjust sweetness if needed.
- Spoon yogurt into silicone molds, filling three-quarters full.
- Add cooled blueberry compote and swirl gently with a toothpick.
- Freeze for at least 3 hours until solid.
- Remove from molds and store in an airtight container in the freezer.
