Description

A festive summer caprese salad made with blueberries, cherry tomatoes, buffalo mozzarella, basil, olive oil, and balsamic vinegar.


Ingredients

Scale
  • 1 pint blueberries
  • 2 pints cherry tomatoes, halved
  • Fresh basil leaves
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • Salt to taste
  • Black pepper to taste
  • 8 ounces firm buffalo mozzarella cheese

Instructions

  1. Wash blueberries and cherry tomatoes thoroughly and drain well.
  2. Slice cherry tomatoes in half and place them into a serving bowl with blueberries.
  3. Slice firm buffalo mozzarella into 1/4-inch to 1/2-inch slices.
  4. Use a small star cookie cutter to cut mozzarella stars.
  5. Place mozzarella stars over the tomatoes and blueberries.
  6. Tear fresh basil over the salad.
  7. Drizzle olive oil and balsamic vinegar evenly over the top.
  8. Season with salt and black pepper.
  9. Serve immediately.

Notes

  1. Use firm buffalo mozzarella for easier star cutting.
  2. Dry the fruit completely before assembling the salad.
  3. Add basil just before serving for the freshest appearance.
  4. Serve chilled for best flavor.
