Description

Fresh blueberries dipped in thick Greek yogurt and frozen until firm create an easy two-ingredient snack for hot summer days.


Ingredients

  • 2 cups fresh blueberries
  • 1 cup thick Greek yogurt, plain or vanilla

Instructions

  1. Place a rimmed cookie sheet in the freezer for at least 1 hour.
  2. Wash the blueberries, remove any stems or damaged berries, and dry them thoroughly.
  3. Line the chilled cookie sheet with wax paper or parchment paper.
  4. Spoon the Greek yogurt into a small, deep bowl or cup.
  5. Pierce one blueberry gently with a toothpick and dip it completely into the yogurt.
  6. Allow excess yogurt to drip into the bowl, then place the coated berry on the lined cookie sheet and remove the toothpick.
  7. Repeat with the remaining blueberries, leaving a small amount of space between each bite.
  8. Place the cookie sheet flat in the freezer for 1 to 2 hours, or until the yogurt coating feels completely firm.
  9. Peel the frozen bites from the paper and transfer them to a freezer-safe bag or container.
  10. Return the Blueberry Yogurt Bites to the freezer until ready to serve.

Notes

  1. Dry the blueberries completely so the Greek yogurt sticks properly.
  2. Use thick Greek yogurt for the fullest and smoothest coating.
  3. Chill the cookie sheet before dipping to keep the yogurt from softening quickly.
  4. Keep the cookie sheet flat in the freezer so the coated berries do not roll together.
  5. Let the frozen bites rest at room temperature for 2 to 5 minutes before serving.
  6. Store the bites in a tightly sealed freezer container for up to 1 month.
  7. Remove every toothpick before serving, and use age-appropriate care when serving whole frozen berries to young children.
