Ingredients
- 4 large flour tortillas
- 6 large eggs, scrambled
- 4 slices of bacon, cooked and chopped
- 1 cup cooked hash browns or diced potatoes
- 1 cup shredded cheddar cheese
- 1/2 cup salsa
- 1/4 cup sour cream
- 1/4 cup diced green onions
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Cook the Bacon and Potatoes: In a skillet over medium heat, cook the bacon until crispy. Remove and drain on paper towels. In the same skillet, cook the hash browns until golden and crispy.
- Scramble the Eggs: In another skillet, heat olive oil and scramble the eggs until fluffy. Season with salt and pepper.
- Warm the Tortillas: Heat the tortillas in a dry skillet for about 30 seconds on each side or microwave them for 10 seconds to make them pliable.
- Assemble the Burritos: Lay a tortilla flat and layer scrambled eggs, bacon, hash browns, cheese, salsa, sour cream, and green onions in the center.
- Wrap the Burritos: Fold in the sides and roll the tortilla tightly.
- Serve or Store: Serve immediately, or wrap in foil for an on-the-go meal.
