Description
Fresh and colorful Breakfast Fruit Kabobs made with strawberries, orange, pineapple, banana, and kiwi, then finished with a drizzle of melted dark chocolate. These rainbow fruit skewers work well for breakfast, brunch, healthy snacks, or parties.
Ingredients
- 6 strawberries, hulled
- 1 orange, peeled, segmented, and cut in half
- ½ ripe pineapple, peeled, cored, and cut into 1-inch chunks, about 1½ cups
- 1 banana, cut into 1-inch slices
- 2 kiwi fruit, peeled and cut into 1-inch chunks
- 1 bar semi-sweet or dark chocolate, vegan or dairy-free if desired
Instructions
- Wash and prepare all the fruit.
- Hull the strawberries, peel and segment the orange, cut the pineapple into chunks, slice the banana, and peel and chop the kiwi.
- Thread the fruit onto wooden skewers in rainbow order: strawberry, orange, pineapple, banana, and kiwi.
- Place the skewers on a large plate or baking sheet lined with parchment or wax paper.
- Break the chocolate bar into pieces and place them in a microwave-safe bowl.
- Microwave the chocolate in 30-second intervals, stirring after each interval, until melted and smooth.
- Drizzle the melted chocolate over the fruit kabobs.
- Sprinkle with flaky sea salt, if desired.
- Place the kabobs in the freezer for about 5 minutes, or until the chocolate hardens.
- Serve and enjoy.
Notes
Store leftover fruit kabobs in the refrigerator for up to 1 day.
Use ripe but firm fruit so the pieces stay securely on the skewers.
Pat the fruit dry before assembling so the chocolate sticks properly.
Add the banana shortly before serving for the best appearance and texture.
Serve the kabobs plain or with vanilla yogurt if you prefer to skip the chocolate.
Use vegan or dairy-free chocolate when preparing a vegan version.
