Description

A creamy, cheesy, and hearty casserole that combines tender chicken, nutritious broccoli, and fluffy rice—all baked to golden perfection. Perfect for busy weeknights or cozy family dinners!

Ingredients

Scale
  • 2 cups cooked chicken, shredded
  • 2 cups broccoli florets (fresh or thawed frozen)
  • 1 cup uncooked white rice (or 2 cups cooked rice)
  • 1 cup shredded cheddar cheese
  • 1 can (10.5 oz) condensed cream of chicken soup
  • 1 cup milk
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs or crushed crackers (optional, for topping)

Instructions

  • Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  • Cook Rice and Chicken: Prepare rice according to package instructions. Cook chicken until fully done, then shred it.
  • Blanch Broccoli: Boil broccoli for 2–3 minutes, then cool it under cold water.
  • Mix Ingredients: In a large bowl, combine cooked rice, shredded chicken, broccoli, shredded cheese, condensed soup, milk, garlic powder, onion powder, salt, and pepper. Mix thoroughly.
  • Assemble Casserole: Transfer the mixture into the prepared baking dish. Smooth it out evenly.
  • Add Topping (Optional): Sprinkle breadcrumbs or crushed crackers on top for added crunch.
  • Bake: Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10 minutes until the top is golden and bubbly.
  • Serve: Let cool slightly before serving. Enjoy!

Notes

1️⃣ Cook Ingredients First: Ensure the chicken is fully cooked, the rice is pre-cooked, and the broccoli is blanched before assembling the casserole. This guarantees even cooking and the perfect texture.

2️⃣ Don’t Skip Seasoning: Proper seasoning with salt, pepper, garlic powder, and onion powder is essential for a flavorful casserole. Taste the mixture before baking to adjust if needed.

3️⃣ Avoid a Dry Casserole: For a creamy texture, ensure there’s enough liquid from the condensed soup and milk. If the mixture looks too thick, add a splash of milk before baking
