Description
Brown butter toffee chocolate chip cookies made with rich browned butter, crisp homemade toffee, and deep dark chocolate.
Ingredients
4 tablespoons salted European butter
1/2 cup light brown sugar, packed
1/2 teaspoon vanilla bean paste
14 tablespoons salted European butter
1/2 cup + 2 tablespoons light brown sugar
1/2 cup granulated sugar
1 whole egg
1 large egg yolk
2 teaspoons vanilla bean paste
2 cups all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon fine sea salt
3/4 cup chopped dark chocolate, 72%
1/2 cup homemade toffee pieces
Instructions
1. Line a baking sheet with parchment.
2. Cook butter and brown sugar for toffee to 295°F and cool.
3. Smash cooled toffee into pieces.
4. Brown butter for dough and cool.
5. Preheat oven to 350°F.
6. Whisk in sugars, egg, yolk, and vanilla.
7. Fold in dry ingredients, chocolate, and toffee.
8. Rest dough 15 minutes.
9. Scoop dough into large balls.
10. Bake 10–13 minutes until edges are golden.
11. Cool on rack and press more toffee on top.
Notes
Use European butter for best flavor.
Press extra chocolate and toffee on top before baking.
