- 1 cup packed brown sugar
- 1 cup pineapple chunks
- 1/2 cup soy sauce
- 1/4 cup ketchup
- 1 tablespoon minced garlic
- 1 teaspoon ground ginger
- Salt and pepper to taste
- 2 tablespoons vegetable oil
- Fresh cilantro for garnish
Instructions
- Season the chicken breasts with salt and pepper.
- Heat vegetable oil in a large skillet over medium-high heat.
- Sear the chicken for 4 to 5 minutes per side until golden brown, then remove from skillet.
- In the same skillet, combine brown sugar, soy sauce, ketchup, garlic, and ginger.
- Stir until the sugar dissolves and the sauce blends together.
- Add pineapple chunks and cook for 1 minute.
- Return chicken to the skillet and coat with sauce.
- Reduce heat to low, cover, and simmer for 20 to 25 minutes.
- Cook until chicken reaches an internal temperature of 165°F.
- Garnish with fresh cilantro and serve with extra sauce.

- Do not boil the sauce rapidly because the sugar may burn.
