Description

For the Brownie Base:

  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1 tsp baking powder
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract

For the Peanut Butter Filling:

  • 1 cup creamy peanut butter
  • 1/2 cup powdered sugar
  • 2 tbsp unsalted butter, softened
  • 1/2 tsp vanilla extract

For the Chocolate Coating:

  • 1 cup semisweet chocolate chips
  • 1 tbsp shortening or vegetable oil

Instructions

  • Prepare the Brownie Base:
    • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
    • In a bowl, whisk flour, cocoa powder, and baking powder.
    • In another bowl, beat melted butter and sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla.
    • Gradually add the dry ingredients to the wet ingredients until combined.
    • Scoop spoonfuls of brownie dough onto the prepared baking sheet. Flatten slightly.
    • Bake for 10–12 minutes. Let cool completely.
  • Prepare the Peanut Butter Filling:
    • In a bowl, mix peanut butter, powdered sugar, butter, and vanilla until smooth.
    • Roll into small balls and place one on each cooled brownie cookie. Flatten slightly.
  • Chocolate Coating:
    • Melt chocolate chips with shortening in a microwave or double boiler until smooth.
    • Spoon melted chocolate over each cookie, fully covering the peanut butter layer.
    • Allow cookies to set at room temperature or chill in the fridge for 30 minutes.
