Description

Budget Black Bean Salsa is a quick fresh dip made with black beans, corn, tomato, onion, and lime juice. Perfect with tortilla chips or as a topping for chicken and tacos.


Ingredients

  • 15 ounces black beans drained
  • 2 cups whole kernel corn frozen or canned
  • 1 large tomato diced
  • 1 small onion diced
  • 2 tablespoons lime juice
  • Cilantro leaves optional
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Thaw the corn first if using frozen so it reaches room temperature.
  2. Drain and rinse the black beans.
  3. Dice the tomato and onion into small pieces.
  4. Place black beans corn tomato and onion in a large mixing bowl.
  5. Add lime juice cilantro salt and pepper.
  6. Gently mix all ingredients until evenly combined.
  7. Serve immediately with tortilla chips or use as a topping for chicken tacos or rice bowls.

Notes

  1. Thaw frozen corn before mixing so the salsa does not become watery.
  2. Let the salsa sit for about 10 minutes for better flavor blending.
  3. Add diced jalapeno if you want extra heat.
