- 1 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground ginger
- 1 1/2 teaspoons ground cinnamon
- 1/2 cup vegetable oil
- 3/4 cup granulated sugar
- 1/2 cup light brown sugar
- 2 large eggs
- 1 1/2 cups butternut squash puree
- 1/4 cup orange juice
Instructions
- Preheat oven to 350°F and prepare a 9×5-inch loaf pan.
- Whisk together flour, baking soda, salt, nutmeg, cloves, ginger, and cinnamon.
- In another bowl whisk oil, sugars, eggs, squash puree, and orange juice.
- Add dry ingredients to wet ingredients and stir until just combined.
- Pour batter into prepared loaf pan.
- Bake for 60 to 65 minutes until a toothpick comes out clean.
- Cool completely before slicing and serving.
Notes
- Do not overmix the batter.
- Store at room temperature for 2 days or refrigerate up to 1 week.
- Freeze slices for up to 3 months.
