Description

Moist and flavorful butternut squash bread made with warm spices, orange juice, and simple pantry ingredients.


Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground ginger
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 cup vegetable oil
  • 3/4 cup granulated sugar
  • 1/2 cup light brown sugar
  • 2 large eggs
  • 1 1/2 cups butternut squash puree
  • 1/4 cup orange juice

Instructions

  1. Preheat oven to 350°F and prepare a 9×5-inch loaf pan.
  2. Whisk together flour, baking soda, salt, nutmeg, cloves, ginger, and cinnamon.
  3. In another bowl whisk oil, sugars, eggs, squash puree, and orange juice.
  4. Add dry ingredients to wet ingredients and stir until just combined.
  5. Pour batter into prepared loaf pan.
  6. Bake for 60 to 65 minutes until a toothpick comes out clean.
  7. Cool completely before slicing and serving.

Notes

  1. Do not overmix the batter.
  2. Store at room temperature for 2 days or refrigerate up to 1 week.
  3. Freeze slices for up to 3 months.
