Description
Classic Cafe du Monde Beignets made at home with light, fluffy fried dough coated generously in powdered sugar, just like New Orleans.
Ingredients

- 1 package active dry yeast
- 1 1/2 cups warm water (100–115°F)
- 1/2 cup granulated sugar
- 1 teaspoon salt
- 2 large eggs
- 1 cup evaporated milk
- 7 cups all-purpose flour
- 1/4 cup vegetable shortening
- Oil for deep frying
- Powdered sugar for dusting
Instructions
- Add warm water to a large bowl and stir in yeast with a few teaspoons of sugar until dissolved.
- Let the yeast mixture proof for 10 minutes until foamy.
- Add remaining sugar, salt, eggs, and evaporated milk and mix well.
- Gradually stir in 4 cups of flour until smooth.
- Beat in shortening, then add remaining flour gradually until a soft dough forms.
- Cover and refrigerate dough overnight if possible.
- Roll dough to 1/8-inch thickness and cut into rectangles.
- Heat oil to 360°F.
- Fry beignets in small batches until puffed and golden, about 2–3 minutes per side.
- Shake hot beignets in powdered sugar and serve immediately.
Notes
- Refrigerating dough overnight improves texture and flavor.
- Dough can be refrigerated for several days.
- Cut dough squares can be frozen and fried from frozen with extra cooking time.
- Do not skimp on powdered sugar for the classic finish.
