Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

  • 1 pound spaghetti
  • 4 tablespoons butter
  • 4 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 3 cups whole milk
  • 1 cup chicken broth
  • 8 ounces cream cheese, softened
  • 2 cups shredded mozzarella cheese, divided
  • 1/2 cup grated Parmesan cheese
  • Salt and freshly ground black pepper, to taste
  • Optional red pepper flakes

Instructions

  1. Cook spaghetti in salted water until al dente, then drain and set aside
  2. Season chicken with Cajun seasoning and smoked paprika
  3. Heat olive oil in a skillet and cook chicken until browned and fully cooked, then remove and set aside
  4. Melt butter in the same skillet and sauté garlic until fragrant
  5. Whisk in flour and cook for 1 to 2 minutes to form a roux
  6. Gradually whisk in milk and chicken broth and bring to a gentle simmer
  7. Stir in cream cheese and 1 cup mozzarella until melted and smooth
  8. Add Parmesan cheese and season with salt, pepper, and optional red pepper flakes
  9. Return chicken to the skillet and simmer briefly
  10. Add cooked spaghetti and toss to coat in the sauce
  11. Sprinkle remaining mozzarella on top and let it melt before serving

Notes

  1. Use rotisserie chicken for quicker preparation
  2. Swap spaghetti with penne or fettuccine if desired
