Ingredients
- 2 tablespoons olive oil
- 1 pound Cajun sausage (Andouille or Tasso), sliced
- 1 medium onion, diced
- 1 bell pepper (red or green), diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 can (14 oz) diced tomatoes, drained
- 1 tablespoon Cajun seasoning
- 1 teaspoon smoked paprika
- 1/2 teaspoon dried thyme
- 1/4 teaspoon cayenne pepper (optional)
- Salt and pepper to taste
- 2 green onions, sliced (for garnish)
Instructions
- Heat olive oil in a large skillet over medium heat. Add the sliced sausage and cook until browned on both sides. Remove and set aside.
- In the same skillet, sauté the onion, bell pepper, and celery until softened, about 5 minutes. Add garlic and cook for another minute until fragrant.
- Stir in the rice and let it toast slightly for 2 minutes. Add Cajun seasoning, smoked paprika, thyme, cayenne pepper (if using), salt, and pepper. Mix well to coat the rice and vegetables.
- Pour in the chicken broth and diced tomatoes, stirring to combine. Bring to a boil, then reduce the heat to low.
- Return the cooked sausage to the skillet, cover, and let simmer for 20-25 minutes, or until the rice is tender and the liquid is absorbed.
- Fluff the rice with a fork, sprinkle with sliced green onions, and serve hot.
