Description

Creamy Cajun scalloped potatoes layered with cheese and seasoned cream for a bold, comforting side dish.


Ingredients

Scale
  • 2 pounds Yukon Gold or Russet potatoes, peeled and thinly sliced
  • 1 tablespoon butter
  • 3 cloves garlic, minced
  • 1.5 cups heavy whipping cream
  • 1 tablespoon Cajun seasoning
  • 1 cup freshly grated cheddar cheese
  • 1 cup freshly grated Parmesan cheese

Instructions

  1. Preheat oven to 350°F and position rack in the middle.
  2. Peel and thinly slice the potatoes and grate the cheeses.
  3. Melt butter in a saucepan, add garlic, then stir in cream and Cajun seasoning.
  4. Heat until just boiling, then remove from heat.
  5. Layer half the potatoes in an 8×8 baking dish, add half the cream and half the cheese.
  6. Repeat layers and finish with cheese on top.
  7. Bake uncovered for 70–75 minutes until potatoes are tender.
  8. Rest for 5 minutes before serving.

Notes

  1. Serves 4–6 depending on portion size.
  2. Do not add extra salt because the seasoning already contains salt.
  3. Place the baking dish on a sheet pan to catch any spills.
