Description

Grilled California Avocado Chicken is a vibrant summer dish made with marinated grilled chicken breasts topped with creamy avocado, juicy cherry tomatoes, and melted cheese. It is quick to prepare, full of flavor, and perfect for healthy weeknight dinners or outdoor gatherings.


Ingredients

  • 4 boneless skinless chicken breasts
  • 3 tablespoons olive oil
  • 2 tablespoons fresh lime juice
  • 2 cloves garlic minced
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 California avocados sliced
  • 1 cup cherry tomatoes halved
  • 1 cup shredded mozzarella or Monterey Jack cheese
  • Optional chopped cilantro
  • Optional balsamic glaze
  • Optional diced red onion

Instructions

  1. In a bowl whisk together olive oil lime juice garlic paprika cumin salt and black pepper to create the marinade
  2. Add the chicken breasts and coat well with the marinade
  3. Cover and refrigerate for at least 30 minutes or up to 4 hours
  4. Preheat the grill or grill pan to medium high heat and lightly oil the grates
  5. Remove the chicken from the marinade and shake off excess marinade
  6. Grill the chicken for 6 to 7 minutes per side until the internal temperature reaches 165°F
  7. Top the cooked chicken with sliced avocado halved cherry tomatoes and shredded cheese
  8. Close the grill lid for 1 to 2 minutes until the cheese melts slightly
  9. Transfer to plates garnish with cilantro or balsamic glaze if desired and serve immediately

Notes

  1. Marinating the chicken longer will deepen the flavor
  2. Use ripe California avocados for the best creamy texture
  3. Avoid flipping the chicken too often so it develops a good sear
  4. Add toppings immediately after cooking so the cheese melts perfectly
