Description

California Roll Sushi Bowls combine seasoned sushi rice, imitation crab, avocado, cucumber, spicy mayo, nori, and sesame seeds for an easy sushi-inspired meal.


Ingredients

  • 1 1/2 cups dry Calrose sushi rice
  • 2 cups water
  • 1/4 cup seasoned rice vinegar
  • 1/4 cup Japanese mayonnaise
  • 2 teaspoons sriracha
  • 8 ounces imitation crab meat
  • 1/2 cup English cucumber, diced
  • 12 nori sheets, chopped
  • 1 large avocado, sliced
  • Black sesame seeds
  • Toasted sesame seeds
  • 1/4 cup low-sodium soy sauce
  • Nori furikake

Instructions

  1. Rinse sushi rice thoroughly.
  2. Cook rice with water in a rice cooker.
  3. Transfer cooked rice to a baking sheet.
  4. Gently mix rice vinegar into the rice.
  5. Allow rice to cool completely.
  6. Mix Japanese mayonnaise and sriracha to make spicy mayo.
  7. Chop imitation crab and cucumber.
  8. Slice avocado and crumble nori.
  9. Divide rice among four bowls.
  10. Top with crab, cucumber, and avocado.
  11. Drizzle with spicy mayo.
  12. Garnish with nori, sesame seeds, and furikake.
  13. Serve with soy sauce.

  1. Do not overmix the rice.
