Description
These bite-sized candy acorns are the perfect way to add whimsy and sweetness to your autumn desserts. With chocolate, peanut butter, and a little creativity, they’re an irresistible seasonal delight!
Ingredients
Scale
- 12 Nutter Butter cookies (or vanilla wafers for variation)
- 1/2 cup peanut butter (or almond/cashew butter for substitutes)
- 1 cup milk or dark chocolate chips
- 1/4 cup butterscotch chips (optional)
- 12 mini pretzel sticks (for the acorn stem)
Instructions
- Prepare the Base: Lay out the Nutter Butter cookies or wafers on a parchment-lined tray. These will serve as the base for your candy acorns.
- Spread the Peanut Butter: On one flat side of each cookie, spread a layer of peanut butter using a small spoon or piping bag for even application.
- Melt the Chocolate: Place the chocolate chips in a microwave-safe bowl. Microwave in 20-second intervals, stirring each time, until smooth and melted. If using butterscotch chips, melt them in a separate bowl.
- Dip for the Acorn Cap: Dip the top half of each cookie (where the peanut butter is spread) into the melted chocolate. Let any excess drip off and place back on the tray.
- Add the Acorn Stem: Break mini pretzel sticks into small pieces (about 1/2 inch). While the chocolate is still soft, gently press a piece of pretzel onto the top of each acorn to form the stem.
- Optional Decoration: Sprinkle coconut flakes, drizzle caramel, or dust with colored sugar to enhance their festive charm.
- Set and Serve: Allow the candy acorns to set at room temperature for 15 minutes, or place them in the fridge for quicker hardening. Serve them on an autumn-themed tray or in decorative bowls!
Notes
- Use Sturdy Cookies: Choose cookies that are firm enough to hold the peanut butter and chocolate without breaking. Alternatives like vanilla wafers or gluten-free cookies work well, but ensure they’re not too crumbly.
- Melt Chocolate Gradually: Always melt chocolate in short intervals, stirring in between, to prevent it from burning. Adding a teaspoon of coconut oil can make it smoother for dipping.
- Customize for Allergies: For nut allergies, substitute peanut butter with sunflower seed butter or use dairy-free chocolate for a vegan option. This keeps the treats inclusive and safe for everyone!
