Moist spiced zucchini bars loaded with pecans and topped with rich caramel frosting that sets like soft fudge.

- 2 large eggs
- 12 Tbsp unsalted butter, melted
- 1/2 cup granulated sugar
- 3/4 cup brown sugar
- 1/2 tsp salt
- 1 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 2 tsp vanilla extract
- 3/4 tsp baking soda
- 1 1/2 cups all purpose flour
- 1 1/2 cups shredded zucchini
- 1 cup chopped pecans
- 4 Tbsp unsalted butter
- 1/2 cup brown sugar
- 2 Tbsp milk or cream
- Pinch salt
- 1 1/2 cups powdered sugar
Instructions
- Preheat oven to 350°F. Butter a 9×9-inch baking pan and line with parchment paper.
- Whisk eggs, melted butter, granulated sugar, brown sugar, salt, cinnamon, nutmeg, and vanilla.
- Whisk in baking soda and fold in flour until combined.
- Fold in shredded zucchini and chopped pecans.
- Spread batter into prepared pan.
- Bake 35 to 45 minutes until risen and lightly golden.
- For frosting, combine butter, brown sugar, milk, and salt in a saucepan.
- Bring to a boil over medium heat and remove from heat.
- Whisk in powdered sugar until smooth.
- Pour frosting over slightly warm bars and spread quickly.
- Cool completely before slicing and serving.
Notes
- Do not overmix the batter.
- Spread frosting immediately after mixing because it sets quickly.
- Store leftovers in an airtight container.
- Bars can be frozen for up to 3 months.
