Description

Caribbean chicken and rice blends coconut milk, spices, tender chicken, peppers, and savory herbs into a bold one-pot meal with color, warmth, and hearty comfort.


Ingredients

6 bone-in, skin-on chicken thighs

2 teaspoons salt

1 teaspoon black pepper

1 teaspoon paprika

1 teaspoon ground allspice

1 teaspoon garlic powder

½ teaspoon onion powder

2 tablespoons vegetable oil

1 medium onion, chopped

3 garlic cloves, minced

1 red bell pepper, diced

1 green bell pepper, diced

1 medium tomato, chopped

1 Scotch bonnet pepper

2 teaspoons fresh thyme

1 teaspoon ground allspice

1 teaspoon smoked paprika

1½ cups long-grain white rice

1½ cups chicken broth

1 cup coconut milk

1 teaspoon salt

½ cup frozen peas

2 green onions, sliced

Fresh cilantro


Instructions

1. Season the chicken with salt, pepper, paprika, allspice, garlic powder, and onion powder.

2. Heat oil and sear chicken on both sides until golden.

3. Sauté onion, garlic, peppers, tomato, Scotch bonnet, thyme, allspice, and paprika.

4. Stir in rice, then add broth and coconut milk.

5. Return chicken to pot and simmer 25–30 minutes.

6. Add peas and rest 5–10 minutes.

7. Fluff rice and garnish with green onions and cilantro.

Notes

Use coconut oil for deeper flavor.

Leave Scotch bonnet whole for mild heat.

Let the pot rest to finish absorption.
