Description

Soft, spiced carrot cake meets creamy cheesecake in these indulgent cookies! With warm cinnamon, crunchy walnuts, and a luscious cream cheese center, these treats are perfect for any occasion.


Ingredients

For the Cookie Dough:

  • 2 cups (250g) all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ¼ tsp ginger
  • ¼ tsp salt
  • ½ cup (115g) unsalted butter, softened
  • ¾ cup (150g) granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup (100g) grated carrots
  • ½ cup (75g) chopped walnuts (optional)
  • ½ cup (75g) raisins (optional)

For the Cheesecake Filling:

  • 4 oz (115g) cream cheese, softened
  • ¼ cup (30g) powdered sugar
  • ½ tsp vanilla extract

Instructions

1️⃣ Prepare the Cheesecake Filling:

  • In a bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth.
  • Cover and refrigerate for 30 minutes to firm up.

2️⃣ Make the Cookie Dough:

  • In a medium bowl, whisk flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
  • In a separate bowl, beat butter and sugar until creamy. Add egg and vanilla, mixing well.
  • Stir in grated carrots, walnuts, and raisins.
  • Gradually fold in dry ingredients until fully combined.

3️⃣ Assemble the Cookies:

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Scoop 1 tbsp of dough, flatten it slightly, and place a small amount of cheesecake filling in the center.
  • Cover with another tbsp of dough, sealing the edges.
  • Repeat for all cookies and place on the baking sheet.

4️⃣ Bake:

  • Bake for 12-15 minutes or until edges turn golden brown.
  • Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

1️⃣ Chill the Cheesecake Filling: Keeping the filling cold helps it stay firm and prevents it from leaking out while baking.

2️⃣ Seal the Cookies Well: Make sure to fully enclose the cheesecake filling with dough to avoid any spills in the oven.

3️⃣ Don’t Overbake: The cookies should be slightly soft when removed from the oven; they will firm up as they cool.
