Instructions
1️⃣ Prepare the Cheesecake Filling:
- In a bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth.
- Cover and refrigerate for 30 minutes to firm up.
2️⃣ Make the Cookie Dough:
- In a medium bowl, whisk flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
- In a separate bowl, beat butter and sugar until creamy. Add egg and vanilla, mixing well.
- Stir in grated carrots, walnuts, and raisins.
- Gradually fold in dry ingredients until fully combined.
3️⃣ Assemble the Cookies:
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Scoop 1 tbsp of dough, flatten it slightly, and place a small amount of cheesecake filling in the center.
- Cover with another tbsp of dough, sealing the edges.
- Repeat for all cookies and place on the baking sheet.
4️⃣ Bake:
- Bake for 12-15 minutes or until edges turn golden brown.
- Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
1️⃣ Chill the Cheesecake Filling: Keeping the filling cold helps it stay firm and prevents it from leaking out while baking.
2️⃣ Seal the Cookies Well: Make sure to fully enclose the cheesecake filling with dough to avoid any spills in the oven.
3️⃣ Don’t Overbake: The cookies should be slightly soft when removed from the oven; they will firm up as they cool.
