Description

Ingredients

  • ½ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ¼ cup milk
  • 1½ cups freshly grated carrots
  • ¾ cup chopped walnuts

Instructions

  1. Preheat oven to 375°F and line a 12-cup muffin pan.
  2. Whisk together flour, cinnamon, nutmeg, baking powder, baking soda, and salt.
  3. Whisk oil, sugars, eggs, vanilla, and milk until smooth.
  4. Gradually mix dry ingredients into wet ingredients.
  5. Fold in grated carrots and walnuts.
  6. Divide batter evenly among muffin cups.
  7. Bake for 20 to 25 minutes until a toothpick comes out clean.
  8. Cool for 10 minutes before transferring to a wire rack.

Notes

  2. Pecans can replace walnuts.
