- 1.5 pounds lean ground beef
- 1 red bell pepper, chopped
- 1 yellow onion, chopped
- 1 ounce taco seasoning mix
- 2 ½ cups biscuit mix
- 1 cup water
- Cooking spray
- ½ cup sour cream
- ½ cup mayonnaise
- 4 ounces diced green chiles, drained
- 1 ½ cups shredded cheddar cheese, divided
- 1 teaspoon garlic powder
- ½ cup mild salsa
Instructions
- Preheat oven to 350°F.
- Cook ground beef in skillet until no longer pink and drain excess fat.
- Add onion and red bell pepper; cook 4 minutes.
- Stir in taco seasoning and remove from heat.
- Mix biscuit mix and water; press into greased 9×13 dish.
- Bake crust 5-8 minutes until set.
- Spread beef mixture over crust.
- Mix sour cream, mayonnaise, green chiles, ¾ cup cheese, and garlic powder.
- Spread mixture over beef layer.
- Spoon salsa on top and sprinkle remaining cheese.
- Bake 30 minutes until hot and bubbly.
- Rest before slicing and serving.

- Drain beef well to prevent greasy texture.
- Allow casserole to rest before slicing.
- Use freshly shredded cheese for better melting.
