Description

Cheat’s Opera Cake is a simple almond-coffee cake with layered whipped cream, bold espresso flavor, and soft sponge that delivers classic French dessert charm in a faster, easier format.

Ingredients

Scale

1 cup almond flour

1/2 cup granulated sugar

3 large eggs

1/2 cup unsalted butter (softened)

1/2 cup brewed strong coffee (espresso preferred)

1 cup heavy cream (for frosting)

1/4 cup powdered sugar (for frosting)

Instructions

1. Preheat the oven to 350°F (175°C). Grease two round baking pans and line them with parchment paper.

2. Combine almond flour and granulated sugar until blended.

3. Beat eggs until frothy, then mix in melted butter and brewed coffee.

4. Whisk wet ingredients into dry ingredients until smooth.

5. Divide batter into pans and bake 25–30 minutes.

6. Whip heavy cream with powdered sugar until stiff peaks form.

7. Cool cakes completely, then layer with whipped frosting.

Notes

Chill the cake before slicing for cleaner layers.

Use strong espresso for best flavor.
