Ingredients
1 lb ziti pasta
1 1/2 cups mayonnaise
1/4 cup sour cream
1 red bell pepper, diced
1 medium red onion, finely diced
1 large carrot, grated
2 celery stalks, finely diced
2 tablespoons diced pimientos with liquid
1 lb sharp cheddar cheese, cubed
2 teaspoons celery salt
2 teaspoons celery seed
2 teaspoons white sugar
Fresh parsley (optional)
Instructions
Cook the ziti pasta in salted water until just tender, then drain and rinse with cold water.
Finely dice the red bell pepper, red onion, carrot, and celery.
Cut the cheddar cheese into small cubes.
In a large bowl, mix mayonnaise, sour cream, sugar, celery salt, celery seed, and pimientos until smooth.
Add the cooled pasta, vegetables, and cheese to the bowl.
Gently stir until everything is evenly coated.
Cover and refrigerate for at least 2 hours before serving.
Notes
