Description

Crisp mini sweet peppers filled with creamy feta, light cheddar cheese, everything bagel seasoning, and a touch of chili crunch. This quick no-cook snack delivers sweet, tangy, savory, and mildly spicy flavor in every bite.


Ingredients

  • 1/2 pound mini sweet peppers
  • 1/4 cup fat-free feta cheese
  • 2 light Laughing Cow cheddar cheese wedges
  • 1 teaspoon everything bagel seasoning, plus more to taste
  • 1/2 teaspoon chili crunch, oil drained
  • Sliced green onions, parsley, or cilantro for garnish, optional

Instructions

  1. Wash and thoroughly dry the mini sweet peppers.
  2. Slice each pepper in half lengthwise and remove the seeds and thick white membranes.
  3. Arrange the pepper halves cut side up on a serving plate or sheet pan.
  4. Place the fat-free feta and Laughing Cow cheddar wedges in a small microwave-safe bowl.
  5. Microwave the cheese mixture for about 30 seconds, just until softened.
  6. Stir the cheeses firmly with a fork until evenly combined.
  7. Add the everything bagel seasoning and drained chili crunch, then stir again.
  8. Taste the filling and add more everything bagel seasoning when desired.
  9. Spoon the cheese mixture evenly into each mini pepper half.
  10. Garnish with sliced green onions or fresh herbs and serve immediately.

Notes

  1. Dry the peppers thoroughly so the cheese filling stays in place.
  2. Drain most of the oil from the chili crunch to prevent a loose filling.
  3. Start with a small amount of everything bagel seasoning because the feta already tastes salty.
  4. Store the cleaned peppers and cheese filling separately for the best meal-prep texture.
  5. Refrigerate assembled leftovers in an airtight container for up to 2 days.
  6. Do not freeze the stuffed peppers because the peppers may become watery after thawing.
