Ingredients

Scale
  • 450 g lean ground beef (1 lb)

  • 8 slices bacon, chopped

  • 85 g shredded Colby Jack cheese (3/4 cup), divided

  • 85 g shredded Cheddar cheese (3/4 cup), divided

  • 170 g cream cheese (6 oz), softened and cubed

  • 40 g finely chopped yellow onion (1/4 cup)

  • 40 g finely chopped red onion (1/4 cup)

  • 60 g mayonnaise (1/4 cup)

  • 180 ml ketchup (3/4 cup)

  • 60 ml yellow mustard (1/4 cup)

  • 60 ml dill relish (1/4 cup)

  • 15 ml Worcestershire sauce (1 tbsp)

  • 1/2 tsp table salt

  • 1/2 tsp black pepper

Toppings:

  • Shredded iceberg lettuce

  • Diced tomatoes

  • Dill pickle chips

  • Tortilla chips or bagel chips for serving

Instructions

  • Preheat oven to 175°C (350°F) and grease a 1.5-liter baking dish.

  • Cook bacon until crispy. Drain on paper towels.

  • In the same skillet, cook beef with both onions until browned and soft. Drain.

  • In a large bowl, combine cooked beef mixture, bacon, salt, pepper, Worcestershire sauce, mayonnaise, ketchup, mustard, and relish.

  • Stir in cream cheese, plus 1/2 cup each of Colby Jack and Cheddar until smooth.

  • Transfer to baking dish and top with remaining cheeses.

  • Bake for 15–20 minutes, until bubbly and hot.

  • Garnish with shredded lettuce, diced tomato, and pickle chips. Serve with chips.

Notes

Freshly shredded cheese melts better than pre-shredded.

Add jalapeños or hot sauce for spice.

Can be made ahead—assemble and refrigerate, bake before serving.

Skip the bacon or use turkey bacon for dietary preferences.
