Description
Cheeseburger Pockets combine seasoned ground beef, onion, and melted American cheese wrapped in biscuit dough and baked until golden for an easy handheld family meal.

- 1/2 pound ground beef
- 1 tablespoon chopped onion
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 1 tube (12 ounces) refrigerated buttermilk biscuits
- 5 slices American cheese
Instructions
- Preheat oven to 400°F.
- In a large skillet cook ground beef, onion, salt, and pepper over medium heat while crumbling the beef until the meat is no longer pink.
- Drain the mixture and allow it to cool slightly.
- Place two biscuits overlapping on a lightly floured surface and roll into a 5-inch oval.
- Place about 1/4 cup of the meat mixture on one side of the oval.
- Fold a slice of American cheese to fit over the meat mixture.
- Fold the dough over the filling and press the edges with a fork to seal.
- Repeat with the remaining biscuits, meat mixture, and cheese.
- Place the pockets on a greased baking sheet.
- Prick the tops with a fork.
- Bake for about 10 minutes or until the pockets are golden brown.
Notes
- Do not overfill the dough to prevent splitting during baking.
- Press the edges firmly with a fork to seal the pockets.
- Serve warm with ketchup or mustard if desired.
