Ingredients
For the Doughnuts:
- 2 cups (250g) all-purpose flour
- ½ cup (100g) granulated sugar
- 2 tsp baking powder
- ½ tsp salt
- ½ cup (115g) unsalted butter, melted
- ¾ cup (180ml) milk
- 2 large eggs
- 1 tsp vanilla extract
For the Cheesecake Filling:
- 8 oz (225g) cream cheese, softened
- ¼ cup (30g) powdered sugar
- ½ tsp vanilla extract
- 1 tsp lemon juice
For the Topping (Optional):
- ½ cup (100g) granulated sugar + 1 tsp cinnamon (for rolling)
- 1 cup (120g) powdered sugar + 2 tbsp (30ml) milk (for glaze)
- ½ cup (90g) melted chocolate (for drizzle)
Instructions
Preheat & Prep: Preheat oven to 350°F (175°C). Grease a doughnut pan.
2️⃣ Make the Dough: In a bowl, whisk flour, sugar, baking powder, and salt. In another bowl, mix melted butter, milk, eggs, and vanilla. Combine wet and dry ingredients until just mixed.
3️⃣ Prepare Filling: Beat cream cheese, powdered sugar, vanilla, and lemon juice until smooth. Transfer to a piping bag.
4️⃣ Assemble Doughnuts: Fill doughnut molds halfway with batter. Pipe a small amount of cheesecake filling in the center, then cover with more batter.
5️⃣ Bake: Bake for 12-15 minutes until golden brown. Let cool for 5 minutes before removing.
6️⃣ Add Toppings: Roll in cinnamon sugar, drizzle with chocolate, or coat with glaze. Enjoy!
