Description
Cheesecake Taquitos are crispy baked flour tortillas filled with a silky cheesecake mixture and coated in cinnamon sugar. Serve warm with strawberries and fresh whipped cream for an easy dessert.

- 2 blocks (8 ounces each) cream cheese softened
- 1/2 cup sour cream
- 2 tablespoons granulated sugar
- 2 teaspoons vanilla extract
- 7 to 8 small (8-inch) flour tortillas
- 1/2 cup salted butter
- 1 cup granulated sugar
- 2 teaspoons ground cinnamon
Instructions
- Beat cream cheese in a large bowl until smooth
- Add sour cream, sugar, and vanilla extract then mix until creamy and lump free
- Warm tortillas in the microwave for about 10 seconds
- Spread about 1/3 cup cheesecake filling on one end of each tortilla
- Roll tortillas tightly leaving the ends open
- Melt butter in a microwave safe bowl
- Mix sugar and cinnamon in another shallow bowl
- Roll each taquito in melted butter then coat in cinnamon sugar
- Place on a greased baking sheet
- Bake at 350°F for 15 to 20 minutes until golden brown
- Let rest for 5 minutes before serving
Notes
- Serve with sliced strawberries, chocolate sauce, caramel sauce, or whipped cream
- Do not overfill tortillas to prevent leaking during baking
- Recipe yields about 7 to 8 taquitos
