Description

A hearty one-pan dinner made with ground beef, tender potatoes, peppers, and melted cheddar cheese.


Ingredients

  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 1.8 pounds white potatoes, peeled and sliced
  • 2 Romano peppers, sliced
  • 1.1 pounds lean ground beef
  • 1 yellow onion, chopped
  • 2 garlic cloves, minced
  • 1 teaspoon sweet paprika
  • 1 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ½ teaspoon chili flakes
  • 2 tablespoons tomato paste
  • 2 tablespoons chopped parsley
  • 2 cups chicken broth
  • 1½ cups grated cheddar cheese

Instructions

  1. Peel and slice the potatoes and prepare all vegetables.
  2. Heat oil and butter in a skillet and brown the potatoes, then remove.
  3. Cook peppers and ground beef in the same skillet until lightly browned.
  4. Add onion, garlic, spices, and tomato paste, then stir well.
  5. Return potatoes to the skillet and pour in chicken broth.
  6. Cover and cook until potatoes are tender, then simmer uncovered to reduce liquid.
  7. Sprinkle cheddar on top, cover, and let melt completely before serving.

Notes

  1. Use freshly grated cheddar for best melting.
  2. Serve immediately while hot for best texture.
