Description
A hearty one-pan dinner made with ground beef, tender potatoes, peppers, and melted cheddar cheese.

- 1 tablespoon olive oil
- 1 tablespoon unsalted butter
- 1.8 pounds white potatoes, peeled and sliced
- 2 Romano peppers, sliced
- 1.1 pounds lean ground beef
- 1 yellow onion, chopped
- 2 garlic cloves, minced
- 1 teaspoon sweet paprika
- 1 teaspoon black pepper
- 1 teaspoon Italian seasoning
- ½ teaspoon salt
- ½ teaspoon chili flakes
- 2 tablespoons tomato paste
- 2 tablespoons chopped parsley
- 2 cups chicken broth
- 1½ cups grated cheddar cheese
Instructions
- Peel and slice the potatoes and prepare all vegetables.
- Heat oil and butter in a skillet and brown the potatoes, then remove.
- Cook peppers and ground beef in the same skillet until lightly browned.
- Add onion, garlic, spices, and tomato paste, then stir well.
- Return potatoes to the skillet and pour in chicken broth.
- Cover and cook until potatoes are tender, then simmer uncovered to reduce liquid.
- Sprinkle cheddar on top, cover, and let melt completely before serving.
Notes
- Use freshly grated cheddar for best melting.
- Serve immediately while hot for best texture.
