Description
These Cheesy Meatball Subs are filled with tender homemade meatballs, rich marinara sauce, and gooey melted cheese tucked into toasted hoagie rolls. They are easy enough for weeknight dinners and hearty enough for game day gatherings.

- 1 lb ground beef or a mix of beef and pork
- 1/2 cup breadcrumbs
- 1 large egg
- 1/4 cup grated onion
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 3/4 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups marinara sauce
- 4 hoagie or sub rolls
- 1 1/2 cups shredded mozzarella cheese
- 4 slices provolone cheese, optional
- 1/4 cup grated Parmesan cheese
- 1 tablespoon butter, optional for toasting rolls
- Fresh basil or parsley, optional for garnish
Instructions
- Preheat oven to 400°F and line a baking sheet with parchment paper.
- In a large mixing bowl, combine ground meat, breadcrumbs, egg, grated onion, minced garlic, Italian seasoning, salt, and black pepper.
- Mix gently until just combined, being careful not to overmix.
- Roll the mixture into 1 to 1 1/2-inch meatballs and place them on the prepared baking sheet.
- Bake for 18 to 20 minutes, or until browned and cooked through.
- In a large saucepan, bring marinara sauce to a simmer over medium heat.
- Add the cooked meatballs to the sauce and simmer for 10 to 15 minutes so the flavors blend.
- Split the rolls open without cutting all the way through.
- Brush the rolls with butter, if desired, and toast in the oven for 3 to 5 minutes until lightly crisp.
- Spoon meatballs and sauce into each toasted roll.
- Top each sub with shredded mozzarella and provolone cheese.
- Place the subs under the broiler for 2 to 3 minutes, or until the cheese melts and bubbles.
- Sprinkle with Parmesan cheese and fresh basil or parsley, then serve hot.
