Ingredients

  • 4 cups mushrooms, sliced (button, cremini, or portobello)
  • 2 cups shredded cheddar cheese
  • 1 cup heavy cream
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 1/2 cup breadcrumbs (optional, for topping)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/4 tsp paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  • Prepare the Mushrooms: Clean mushrooms with a damp cloth and slice evenly.
  • Cook the Mushrooms: Heat a skillet over medium heat, melt 1 tbsp butter, and sauté mushrooms until tender and golden brown. Set aside.
  • Make the Cheese Sauce: In the same skillet, melt the remaining butter. Stir in flour to form a roux. Gradually whisk in heavy cream and cook until thickened. Add shredded cheddar, garlic powder, onion powder, paprika, salt, and pepper. Stir until cheese is fully melted.
  • Combine: Mix cooked mushrooms into the cheese sauce, ensuring all pieces are evenly coated.
  • Assemble: Pour the mixture into a greased casserole dish. Sprinkle breadcrumbs on top if desired.
  • Bake: Preheat oven to 375°F (190°C). Bake for 25-30 minutes, or until the top is golden and bubbling.
  • Garnish and Serve: Let the casserole cool for a few minutes. Garnish with fresh parsley and serve warm.

Notes

1️⃣ Don’t Overcook the Mushrooms: When sautéing the mushrooms, cook them just until tender and golden. Overcooking will make them soggy and can impact the texture of the casserole.

2️⃣ Customize the Cheese: Experiment with different cheeses like Gruyère, Swiss, or mozzarella for unique flavors and textures. Mixing multiple cheeses can elevate the dish!

3️⃣ Add a Crunchy Topping: For added texture, sprinkle breadcrumbs or fried onions on top before baking. This will create a delightful contrast to the creamy filling.
