  • 2 cups cooked white rice (or substitute with brown rice)
  • 1 packet (1 oz) ranch seasoning mix
  • 1 cup shredded cheddar cheese
  • 1/2 cup mozzarella cheese (optional for extra creaminess)
  • 1/2 cup sour cream
  • 1/4 cup milk
  • 1/2 cup diced onions (optional)
  • 1 cup cooked mixed vegetables (e.g., peas, carrots, corn – optional)
  • 1 tbsp olive oil or butter (for greasing the baking dish)

Instructions

  • Cook the Beef: Heat a skillet over medium heat and brown the ground beef. Add diced onions if using, and cook until softened. Drain excess fat and set aside.
  • Prepare the Rice: Cook the rice according to package instructions. If using leftover rice, ensure it’s warm and fluffy.
  • Mix the Ingredients: In a large bowl, combine the cooked beef, rice, ranch seasoning mix, sour cream, milk, and 3/4 cup of the cheddar cheese. If adding vegetables, fold them into the mixture. Stir until everything is evenly combined.
  • Assemble the Casserole: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with olive oil or butter. Pour the mixture into the dish, spreading it evenly. Top with the remaining cheddar cheese and optional mozzarella.
  • Bake: Cover the casserole with aluminum foil and bake for 20 minutes. Remove the foil and bake for another 10 minutes, or until the cheese is melted and golden on top.
