  • 23 smoked sausage links, sliced
  • 1 packet ranch seasoning mix
  • 1 cup shredded cheddar cheese
  • 1/4 cup sour cream (optional)
  • 1/2 cup diced onions or bell peppers (optional)
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  • Prep Ingredients: Preheat your oven to 375°F (190°C). Wash, peel, and dice the potatoes into even cubes. Toss them in a bowl with olive oil, ranch seasoning, salt, and pepper until well coated.
  • Cook Sausage & Veggies: In a skillet over medium heat, cook sliced sausage until browned (about 5 minutes). Add onions or bell peppers (if using) and sauté for another 3-4 minutes until softened.
  • Assemble: In a large baking dish, layer the seasoned potatoes, sausage, and veggies. Spread evenly for even cooking.
  • Cheese It Up: Sprinkle shredded cheddar cheese over the top. For extra creaminess, mix sour cream into the potato mixture before layering.
  • Bake: Cover the dish with foil and bake for 25-30 minutes. Remove foil and bake for another 10-15 minutes until the cheese is bubbly and golden.
  • Serve: Let cool for 5 minutes. Garnish with chopped parsley or chives for a fresh finish. Serve warm and enjoy!
