Description
A simple and delicious cheesy zucchini casserole made with zucchini, tomatoes, onion, bell pepper, mozzarella cheese, herbs, and olive oil.

- 2 large zucchinis, diced
- 1 onion, chopped
- 1 cup grape tomatoes, halved
- 1 green bell pepper, diced
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1 teaspoon freshly cracked black pepper
- 1 cup grated mozzarella cheese
- 1 tablespoon parsley
- 1/2 teaspoon crushed chili pepper flakes
Instructions
- Preheat oven to 375°F (190°C).
- Dice zucchini and bell pepper, chop onion, and halve tomatoes.
- Combine vegetables with olive oil, garlic powder, Italian seasoning, salt, pepper, and half the mozzarella cheese.
- Transfer mixture to a greased baking dish.
- Bake for 20 minutes.
- Sprinkle remaining mozzarella cheese over the vegetables.
- Bake for 10 more minutes until cheese melts and turns lightly golden.
- Garnish with parsley and chili flakes before serving.
Notes
- Do not overcrowd the baking dish.
- Use freshly grated mozzarella for best melting.
- Add Parmesan cheese for extra flavor.
- Store leftovers in the refrigerator for up to 4 days.
