- 1/4 teaspoon black pepper
- 1 cup shredded mozzarella cheese, for topping

Instructions
- Preheat oven to 425°F. Line a large baking sheet with parchment paper.
- Shred the zucchini using a box grater or food processor.
- Place the shredded zucchini in a clean kitchen towel or cheesecloth and squeeze out as much liquid as possible.
- In a large mixing bowl, combine the squeezed zucchini, eggs, 1/2 cup mozzarella, Parmesan, garlic powder, Italian seasoning, salt, and black pepper.
- Mix until the zucchini mixture looks evenly combined.
- Spread the mixture onto the prepared baking sheet and press it into a thin, even rectangle.
- Bake for 20 to 25 minutes, or until the base turns golden brown and feels firm to the touch.
- Remove from the oven and sprinkle 1 cup mozzarella evenly over the top.
- Return to the oven and bake for 5 to 7 minutes, or until the cheese melts and turns bubbly.
- Let cool slightly, then slice into breadsticks.
- Garnish with fresh parsley or basil if desired, and serve warm with marinara or ranch.

- Squeeze the zucchini very well to keep the breadsticks from turning soggy.
