Description

These Cheesy Zucchini Breadsticks are a low-carb, veggie-packed twist on classic cheesy breadsticks. Shredded zucchini, mozzarella, Parmesan, eggs, and Italian seasoning bake into a golden base, then a bubbly cheese topping finishes each slice. Serve warm with marinara or ranch for dipping.

  • 2 medium zucchinis, about 2 cups shredded
  • 2 large eggs
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded mozzarella cheese, for topping
  • Fresh parsley or basil, optional garnish
  • Marinara sauce or ranch, for serving

Instructions

  1. Preheat oven to 425°F. Line a large baking sheet with parchment paper.
  2. Shred the zucchini using a box grater or food processor.
  3. Place the shredded zucchini in a clean kitchen towel or cheesecloth and squeeze out as much liquid as possible.
  4. In a large mixing bowl, combine the squeezed zucchini, eggs, 1/2 cup mozzarella, Parmesan, garlic powder, Italian seasoning, salt, and black pepper.
  5. Mix until the zucchini mixture looks evenly combined.
  6. Spread the mixture onto the prepared baking sheet and press it into a thin, even rectangle.
  7. Bake for 20 to 25 minutes, or until the base turns golden brown and feels firm to the touch.
  8. Remove from the oven and sprinkle 1 cup mozzarella evenly over the top.
  9. Return to the oven and bake for 5 to 7 minutes, or until the cheese melts and turns bubbly.
  10. Let cool slightly, then slice into breadsticks.
  11. Garnish with fresh parsley or basil if desired, and serve warm with marinara or ranch.

Notes

  1. Squeeze the zucchini very well to keep the breadsticks from turning soggy.
  2. Spread the mixture thinly for crisper edges.
