Description

Cherry Pie Crumb Bars are buttery crumb bars filled with fresh cherries and baked until golden for the perfect summer dessert.


Ingredients

Scale
  • ½ cup unsalted butter, melted and cooled
  • ½ cup granulated sugar
  • 1½ cups all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 2 cups fresh cherries, pitted and halved
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon granulated sugar for topping

Instructions

  1. Preheat oven to 375°F.
  2. Line an 8-inch square baking pan with parchment paper and butter the pan.
  3. Mix cherries, cornstarch, and lemon juice in a medium bowl.
  4. Stir melted butter and sugar together in a large bowl.
  5. Add flour, baking soda, baking powder, and salt and mix until crumbly.
  6. Reserve ¾ cup of crumb mixture for topping.
  7. Press remaining crumb mixture into prepared pan.
  8. Spread cherry filling evenly over crust.
  9. Sprinkle reserved crumb mixture over cherries.
  10. Sprinkle sugar over the topping.
  11. Bake for 23 to 25 minutes until golden brown.
  12. Cool completely before slicing into bars.

  1. Refrigerate leftovers for up to 3 days.
  2. Allow bars to cool completely before cutting.
