Cherry Pie Crumb Bars are buttery crumb bars filled with fresh cherries and baked until golden for the perfect summer dessert.
Ingredients

- ½ cup unsalted butter, melted and cooled
- ½ cup granulated sugar
- 1½ cups all-purpose flour
- ½ teaspoon baking soda
- ½ teaspoon baking powder
- ¼ teaspoon salt
- 2 cups fresh cherries, pitted and halved
- 1 tablespoon cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon granulated sugar for topping
Instructions
- Preheat oven to 375°F.
- Line an 8-inch square baking pan with parchment paper and butter the pan.
- Mix cherries, cornstarch, and lemon juice in a medium bowl.
- Stir melted butter and sugar together in a large bowl.
- Add flour, baking soda, baking powder, and salt and mix until crumbly.
- Reserve ¾ cup of crumb mixture for topping.
- Press remaining crumb mixture into prepared pan.
- Spread cherry filling evenly over crust.
- Sprinkle reserved crumb mixture over cherries.
- Sprinkle sugar over the topping.
- Bake for 23 to 25 minutes until golden brown.
- Cool completely before slicing into bars.
Notes
- Refrigerate leftovers for up to 3 days.
- Allow bars to cool completely before cutting.
