  • 1 sheet puff pastry, thawed
  • 1 ½ cups fresh or frozen cherries, pitted
  • ¼ cup granulated sugar
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch
  • 1 tbsp butter
  • 1 egg (for egg wash)
  • Powdered sugar (optional, for garnish)

Instructions

1️⃣ Prepare the cherry filling: In a saucepan over medium heat, combine cherries, sugar, and lemon juice. Stir occasionally until the cherries release their juices and soften (about 5 minutes).
2️⃣ In a small bowl, mix cornstarch with 1 tbsp water to make a slurry. Add it to the cherry mixture, stirring constantly until the filling thickens. Remove from heat and let it cool.
3️⃣ Prepare the pastry: Preheat the oven to 375°F (190°C). Roll out the puff pastry on a lightly floured surface and cut it into 6 equal squares or rectangles.
4️⃣ Assemble: Spoon a small amount of cherry filling onto the center of each pastry square. Fold over into a triangle or rectangle and press the edges with a fork to seal.
5️⃣ Egg wash & bake: Brush each pastry with beaten egg for a golden finish. Place on a parchment-lined baking sheet and bake for 18-20 minutes or until golden brown and puffy.
6️⃣ Serve: Let cool for a few minutes, then dust with powdered sugar if desired. Enjoy warm or at room temperature!

Notes

1️⃣ Prevent a Soggy Pastry: Make sure the cherry filling is thick and fully cooled before placing it on the puff pastry. Excess liquid can make the pastry soggy instead of flaky.

2️⃣ Seal the Edges Well: Use a fork to crimp the edges of the pastry firmly. This prevents the filling from leaking out while baking and helps maintain a neat shape.

3️⃣ Bake at the Right Temperature: Always preheat your oven to at least 375°F (190°C) before baking. A hot oven ensures the puff pastry rises properly and turns golden brown and crispy.
