- 1 pint cherry tomatoes, sliced in half
- 3 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- 8 ounces fresh mozzarella pearls
- 1/2 cup fresh basil leaves
- Salt and pepper to taste
- Balsamic glaze for garnish
Instructions
- Rinse and slice the cherry tomatoes in half.
- Drain and pat dry the mozzarella pearls.
- Wash and dry the basil leaves completely.
- Add tomatoes, olive oil, balsamic vinegar, and mozzarella pearls to a medium bowl.
- Season with salt and pepper to taste.
- Toss gently until evenly coated.
- Top with fresh basil leaves.
- Drizzle balsamic glaze over the salad before serving.
- Serve immediately or refrigerate for up to 2 hours.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Remove basil leaves before storing and add fresh basil when serving again.
- Do not freeze because the tomatoes and mozzarella will become mushy.
- Whole basil leaves stay fresh longer than chopped basil.
