Description
Sweet vanilla infused dark cherry jam with a rich homemade flavor that works perfectly for canning or freezing.

- 5 cups sweet dark cherries, chopped
- 2 1/2 cups white sugar
- 3 tablespoons lemon juice
- 1 vanilla bean, split and seeds scraped or 3 teaspoons vanilla extract
- 1 packet low-sugar pectin (49 g)
Instructions
- Pit and chop the cherries into small chunks.
- Add cherries and released juice to a large wide pot.
- Stir in lemon juice, vanilla, pectin, and 1/4 cup sugar.
- Heat over high heat while stirring gently until the mixture reaches a full rolling boil.
- Add remaining sugar and continue stirring until the jam returns to a full boil.
- Boil for exactly 1 minute while stirring continuously.
- Remove from heat immediately after cooking.
- For refrigerator jam, cool slightly before transferring to storage jars.
- For canning, fill sterilized jars leaving 1/4 inch headspace.
- Wipe rims clean, secure lids tightly, and process in boiling water for 10 minutes.
- Cool jars completely before storing.
Notes
- Fresh or frozen cherries both work well in this recipe.
- If using frozen cherries, thaw completely and drain excess liquid first.
- To freeze jam instead of canning, boil the second boil for 45 seconds instead of 1 minute.
- Store unopened canned jars up to 18 months in a cool dark place.
- Refrigerate opened jars and use within 1 month.
